Les Estables, the highest village in the Central Massif, perched at 1,343 metres above sea level where Haute-Loire meets Ardèche, is located at the feet of the Mont Mézenc (1,753 m) and Mont Alambre (1,691 m). Husbandry has traditionally been the lifeblood of the area, with Fin gras du Mézenc appellation of origin beef as one of its standout products. At the same time, year-round tourism is growing, keeping the vast wild expanses pristine and turning the area into a haven of peace and quiet with a few sprinkles of adventure. The numerous hikers who visit the spot can take the time to admire the unique architecture of its sprawling farms with stone-tiled roofs, gaze in awe at the larger-than-life panorama at the top of the Mézenc, discover its exceptional biodiversity, and enjoy the silence of these unblemished natural landscapes.
