Les Estables, the highest village in the Central Massif, perched at 1,343 metres above sea level where Haute-Loire meets Ardèche, is located at the feet of the Mont Mézenc (1,753 m) and Mont Alambre (1,691 m). Husbandry has traditionally been the lifeblood of the area, with Fin gras du Mézenc appellation of origin beef as one of its standout products.
